Ingredients

For the Ribeye Steak:

2 ribeye steaks (about 1 inch thick)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon unsalted butter (for finishing)

For the Cheesy Scalloped Potatoes:

4 medium russet potatoes, thinly sliced

1 cup heavy cream

1 cup milk

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh chives, chopped (for garnish)

Instructions

Prep the Scalloped Potatoes:

    - Preheat your oven to 375°F (190°C).

      - In a saucepan over medium heat, combine heavy cream, milk, minced garlic, onion powder, salt, and pepper. Stir until warmed but do not boil.

        - In a greased 9x13 inch baking dish, layer half of the thinly sliced potatoes, sprinkle with half of the cheddar and Parmesan cheese, and pour half of the cream mixture over it.

          - Repeat with the remaining potatoes, cheeses, and cream mixture, ensuring that the top layer is well-covered with cheese.

            - Cover with foil and bake for 40 minutes, then uncover and bake for an additional 20 minutes until golden and bubbly.

              Cook the Ribeye Steaks:

                - While the potatoes are baking, rub the ribeye steaks with olive oil, minced garlic, rosemary, salt, and black pepper.

                  - Heat a skillet or grill over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare (cook longer for desired doneness).

                    - In the last minute of cooking, add butter on top of the steaks for added richness.

                      - Remove the steaks from the skillet and let them rest for 5 minutes before slicing.

                        Serve:

                          - Slice the ribeye steaks against the grain and plate them alongside the cheesy scalloped potatoes.

                            - Garnish the scalloped potatoes with chopped chives for a fresh finish.

                              Prep Time: 20 minutes | Total Time: 1 hour 20 minutes | Servings: 2

                                - Presentation Tips: Serve the steaks on warm plates with a serving of scalloped potatoes stacked high. Drizzle a bit of the melted cheese over the potatoes for a decadent touch, and place a sprig of fresh rosemary on each plate for an aromatic garnish. Enjoy!
