2 ribeye steaks (1 inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

2 large onions, thinly sliced

2 teaspoons sugar

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

½ cup beef broth

4 medium potatoes, cut into thin strips for fries

2 tablespoons cornstarch

Oil for frying (vegetable or peanut oil)

Fresh parsley, chopped for garnish

Prepare the Onions: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and a pinch of salt. Cook for about 10 minutes, stirring occasionally, until they start to soften and caramelize.

    Caramelize the Onions: Sprinkle the sugar over the onions and continue to cook for another 15–20 minutes, stirring occasionally, until they are golden brown and beautifully caramelized. Add garlic, thyme, and balsamic vinegar, cooking for an additional 2 minutes until fragrant. Pour in the beef broth and simmer until slightly thickened. Remove from heat and set aside.

      Prepare the French Fries: Soak the cut potatoes in cold water for about 30 minutes to remove excess starch. Drain and pat them dry with paper towels. Toss the potatoes in cornstarch evenly to coat.

        Fry the Potatoes: Heat oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on a paper towel-lined plate. Season with salt immediately.
