Ingredients

2 ribeye steaks (1-inch thick)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup crumbled blue cheese

1 tablespoon Worcestershire sauce

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Freshly cracked black pepper (for garnish)

Instructions

Prepare the Steaks: Remove ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking. Season both sides generously with salt and black pepper.

Sear the Steaks: Heat olive oil in a cast-iron skillet or a heavy-bottomed pan over medium-high heat. Once hot, add the ribeye steaks. Sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is achieved. Use a meat thermometer to check for doneness (130°F for medium-rare).

Rest the Steaks: Transfer the steaks to a plate, cover loosely with aluminum foil, and let them rest while you prepare the sauce.

Make the Blue Cheese Sauce: In the same skillet (do not wipe it clean), add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer, scraping up any browned bits from the bottom of the pan.

Add the Cheese: Reduce the heat to low, and stir in the crumbled blue cheese and Worcestershire sauce. Continue to stir until the cheese melts and the sauce thickens slightly. Taste and adjust seasoning with additional salt and pepper if needed.

Serve: Slice the rested ribeye steaks against the grain. Plate with the sliced steak and generously drizzle the blue cheese sauce over the top. Garnish with chopped parsley and freshly cracked black pepper, if desired.

              Prep Time: 10 minutes | Total Time: 50 minutes | Servings: 2
