Ingredients

2 cups Rice Krispies cereal

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup mini marshmallows (optional)

1/4 cup chopped nuts (optional, e.g., walnuts or pecans)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy using a hand mixer or stand mixer.

Add Wet Ingredients: Beat in the egg and vanilla extract into the butter-sugar mixture until well combined.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Fold in Extras: Gently fold in the Rice Krispies, chocolate chips, mini marshmallows (if using), and nuts (if using). Use a spatula to ensure everything is well distributed without crushing the cereal.

Scoop the Cookies: Using a cookie scoop or spoon, drop heaping tablespoon-sized balls of dough onto the prepared baking sheet, leaving some space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers appear slightly underbaked.

Cool: Remove from oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cool, enjoy your crispy, chewy, and chocolatey Rice Krispie Cookies with a glass of milk or your favorite beverage!
