Ingredients

1.5 lbs beef chuck, cut into 1-inch cubes

3 cups beef broth

1 cup heavy cream

1 medium onion, chopped

3 garlic cloves, minced

2 cups canned crushed tomatoes

2 teaspoons dried Italian herbs (oregano, basil, thyme)

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

12 oz penne pasta

1 cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Instructions

In your slow cooker, combine the beef cubes, chopped onion, minced garlic, crushed tomatoes, beef broth, Italian herbs, smoked paprika, salt, and pepper. Stir well to combine.

Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender and easily shredded.

Once the beef is cooked, remove it from the slow cooker and shred with two forks. Return the shredded beef to the slow cooker.

Stir in the heavy cream and let it cook for an additional 30 minutes on low heat to meld the flavors and create a rich sauce.

In the last 15 minutes of cooking, boil a large pot of salted water and cook the penne pasta according to package instructions until al dente. Drain and reserve a little pasta water.

Add the cooked pasta to the slow cooker and stir until well combined. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Serve the pasta in bowls topped with grated Parmesan cheese and a sprinkle of fresh parsley.
