Ingredients
  

1 lb fresh crab meat (preferably a mix of lump and claw)

1 lb shrimp, peeled and deveined

4 cups seafood stock

1 medium onion, diced

2 stalks celery, diced

1 carrot, diced

4 cloves garlic, minced

1 cup dry white wine

1 cup heavy cream

1/4 cup tomato paste

2 tablespoons Old Bay seasoning

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

2 tablespoons olive oil

1 tablespoon butter

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Sauté the Aromatics: In a large heavy-bottomed pot, heat olive oil and butter over medium heat. Add the diced onion, celery, and carrot. Sauté for about 5-7 minutes, or until the vegetables are soft and the onion is translucent. Stir in the garlic and cook for an additional minute until fragrant.

    De-glaze the Pot: Pour in the white wine, scraping the bottom of the pot to de-glaze and incorporate any browned bits. Allow the wine to simmer for about 3-4 minutes until it reduces slightly.

      Add the Base: Stir in the tomato paste, Old Bay seasoning, paprika, cayenne pepper, salt, and pepper. Mix well to combine, allowing the spices to toast for an additional 2-3 minutes.

        Incorporate the Stock: Slowly add the seafood stock to the pot, bringing it to a gentle boil. Reduce the heat and let it simmer for 15-20 minutes to meld the flavors.

          Blend for Creaminess: Using an immersion blender, blend the soup until smooth. For an extra creamy texture, you can transfer portions to a blender and blend until desired smoothness, then return it to the pot.

            Add Seafood: Add the shrimp and crab meat to the pot. Simmer for another 5-7 minutes, or until the shrimp is cooked through and pink.

              Finish with Cream: Stir in the heavy cream and adjust seasoning with salt and pepper to taste. Heat gently until warmed through, but do not allow it to boil.

                Serve: Ladle the bisque into bowls, garnishing with fresh chives or parsley. Serve hot with crusty bread for dipping.
