1 pre-made pie crust (store-bought or homemade)

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

3 large eggs

1/2 cup milk (or heavy cream for extra richness)

1 clove garlic, minced

1/4 teaspoon nutmeg

Salt and pepper, to taste

1 tablespoon olive oil

1/4 cup diced onions

Optional: a pinch of red pepper flakes for kick

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a skillet over medium heat, add olive oil, then sauté the diced onions until translucent (about 3-4 minutes). Add the minced garlic and chopped spinach and cook until the spinach wilts. Season with salt, pepper, and red pepper flakes (if using). Remove from heat.

      Prepare Custard Mixture: In a mixing bowl, whisk together the ricotta cheese, eggs, milk, and nutmeg until smooth. Stir in the grated Parmesan cheese and mix well. Season with salt and pepper.

        Combine Ingredients: Add the sautéed spinach and onion mixture into the ricotta egg mixture and stir until evenly distributed.

          Assemble the Quiche: Place the pre-made pie crust into a quiche or pie dish. Pour the filling mixture into the crust, spreading it out evenly.

            Bake: Place in the preheated oven and bake for 35-40 minutes, or until the center is set and slightly golden on top. A knife inserted in the center should come out clean.

              Cool and Serve: Allow the quiche to cool for about 10 minutes before slicing. Serve warm or at room temperature, garnished with fresh herbs if desired.
