1 pound rigatoni pasta

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 pound ground beef (or a mix of beef and pork)

1 can (28 ounces) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup red wine (optional)

1/2 cup grated Parmesan cheese (plus more for serving)

1/2 cup fresh basil leaves, for garnish

1 cup shredded mozzarella cheese

Instructions
 

Begin by cooking the rigatoni according to package instructions until al dente. Drain and set aside.

    In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.

      Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

        Increase the heat to medium-high and add the ground meat, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes. Drain excess fat if necessary.

          Stir in the crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. If using red wine, add it now and let it simmer for about 10 minutes to meld the flavors together.

            After 10 minutes, reduce the heat to low and stir in 1/2 cup of grated Parmesan cheese, mixing until melted and fully combined.

              In a large mixing bowl, combine the cooked rigatoni with the meat sauce, ensuring the pasta is well coated.

                Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with a little olive oil.

                  Transfer the rigatoni and meat sauce mixture into the prepared baking dish. Sprinkle the top with mozzarella cheese and additional Parmesan cheese for a golden, cheesy crust.

                    Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.

                      Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
