12 oz rigatoni pasta

1 cup walnuts, toasted

8 oz mushrooms (cremini or button), finely chopped

1 medium onion, diced

3 cloves garlic, minced

1 carrot, grated or finely diced

1 celery stalk, finely diced

1 can (15 oz) crushed tomatoes

2 tbsp tomato paste

1 tbsp soy sauce or tamari

1 tsp dried oregano

1 tsp dried basil

½ tsp smoked paprika

Salt and pepper, to taste

Fresh basil, for garnish

Olive oil, for sautéing

Instructions
 

Prepare the Walnut Mushroom Meat: In a food processor, add the toasted walnuts and pulse until they resemble a coarse meal. Transfer to a bowl and set aside.

    Sauté Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until vegetables are tender. Add minced garlic and cook for an additional minute.

      Add Mushrooms: Stir in the finely chopped mushrooms and cook for about 5 minutes until they release their moisture and begin to soften.

        Combine Ingredients: Add the processed walnuts, crushed tomatoes, tomato paste, soy sauce, dried oregano, dried basil, smoked paprika, salt, and pepper. Stir everything together and let it simmer for about 15-20 minutes, allowing the flavors to meld.

          Cook Rigatoni: While the sauce is simmering, bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Drain and set aside.

            Mix Pasta and Sauce: Add the cooked rigatoni to the skillet with the walnut mushroom sauce. Toss to combine, allowing the pasta to soak up the sauce for a couple of minutes.
