2 cups cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon balsamic vinegar

1 cup ricotta cheese

Zest of 1 lemon

2 tablespoons honey

4 slices of sourdough bread

Fresh basil leaves for garnish

Flaky sea salt for topping

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, toss the halved cherry tomatoes with olive oil, salt, and pepper until evenly coated.

      Roast the tomatoes in the preheated oven for about 20-25 minutes, or until they are soft and slightly caramelized. Remove from oven and drizzle with balsamic vinegar.

        While the tomatoes are roasting, in a mixing bowl, combine the ricotta cheese, lemon zest, and honey. Whip with a spatula or a hand mixer until smooth and creamy. Adjust honey to taste for desired sweetness.

          Toast the sourdough bread slices in a toaster or on a skillet until golden brown and crispy.

            To assemble the toasts, spread a generous layer of the whipped ricotta on each toast. Top with a generous spoonful of the roasted tomatoes.

              Finish with fresh basil leaves, a sprinkle of flaky sea salt, and an additional drizzle of olive oil if desired.
