Ingredients
  

1 bunch of fresh asparagus, trimmed

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

3 tablespoons olive oil

2 tablespoons balsamic glaze

1 tablespoon fresh basil, chopped

2 cloves garlic, minced

Salt and pepper to taste

Zest of 1 lemon

Instructions
 

Preheat your oven to 400°F (200°C).

    On a large baking sheet, arrange the trimmed asparagus and halved cherry tomatoes.

      Drizzle the olive oil over the asparagus and tomatoes.

        Add the minced garlic, lemon zest, salt, and pepper, then toss everything together until well coated.

          Roast in the preheated oven for about 15 minutes or until the asparagus is tender but still crisp.

            In the last 5 minutes of roasting, add the halved mozzarella balls to the baking sheet.

              Once roasted, remove from the oven and drizzle balsamic glaze over the top.

                Sprinkle with fresh basil before serving. Serve warm.
