1.5 lbs baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

Zest of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the oven to 425°F (220°C).

    In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper. Mix well until the potatoes are fully coated.

      Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper, cut side down for maximum crispiness.

        Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through for even roasting.
