Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons honey (plus extra for drizzling)

1 tablespoon balsamic vinegar

1 cup ricotta cheese

1 teaspoon vanilla extract

4 slices of thick sourdough bread

2 tablespoons olive oil

Fresh mint leaves for garnish

Salt to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prep the Strawberries: In a medium bowl, combine the sliced strawberries, honey, and balsamic vinegar. Toss until the strawberries are well coated.

Roast the Strawberries: Spread the strawberries evenly on a parchment-lined baking sheet. Roast in the oven for about 15-20 minutes, or until they become soft and syrupy. Remove from the oven and set aside to cool slightly.

Whip the Ricotta: In a separate bowl, combine the ricotta cheese, vanilla extract, and a pinch of salt. Use a hand mixer or whisk to whip until fluffy and smooth. This should take about 2-3 minutes.

Toast the Bread: Brush each slice of sourdough bread with olive oil on both sides. Place the slices on another baking sheet and toast in the oven for about 8-10 minutes, or until golden brown and crispy.

Assemble the Toast: On each slice of toasted sourdough, spread a generous layer of the whipped ricotta. Top with the roasted strawberries and their juices.

Garnish and Serve: Drizzle with additional honey and garnish with fresh mint leaves before serving.
