3 cups all-purpose flour

1 packet (2 1/4 teaspoons) instant yeast

1 teaspoon salt

1 tablespoon sugar

1 cup warm water (about 110°F)

2 tablespoons olive oil

2 tablespoons fresh rosemary, finely chopped

4 cloves garlic, minced

1/2 cup unsalted butter, melted

Extra rosemary sprigs for garnish (optional)

Instructions
 

In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until frothy.

    Add the olive oil, salt, and chopped rosemary to the yeast mixture. Mix well.

      Gradually add the flour, one cup at a time, mixing until a soft dough forms. You may not need all the flour, so adjust as necessary.

        Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.

          Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Preheat your oven to 375°F (190°C).

              After the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a ball and place them in a greased round baking pan or cast-iron skillet.

                Cover the rolls with a towel and let them rise for another 30 minutes.

                  While the rolls are rising, prepare the garlic butter by melting the butter in a small saucepan over low heat. Add the minced garlic and simmer for 2-3 minutes until fragrant. Remove from heat.

                    Once the rolls have risen, brush them generously with the garlic butter mixture, reserving a little for basting after baking.

                      Bake the rolls in the preheated oven for about 20-25 minutes, or until golden brown.

                        Remove from the oven and, while still warm, brush with the remaining garlic butter and sprinkle with additional fresh rosemary if desired.

                          Let cool slightly before serving warm with extra garlic butter on the side.
