4 bone-in pork chops (about 1 inch thick)

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon lemon juice (optional, for brightness)

Prepare the Pork Chops: Remove pork chops from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

    Season the Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.

      Make the Garlic Rosemary Butter: In a small bowl, combine the minced garlic, chopped rosemary, and softened butter. Mix well to create a compound butter. Set aside.

        Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Allow it to get hot but not smoking.

          Sear the Chops: Add the pork chops to the skillet, cooking for about 4-5 minutes on one side until a golden-brown crust forms. Resist the urge to move them around for the first few minutes to ensure they sear properly.

            Flip the Chops: Turn the pork chops over and cook for another 3-4 minutes, or until they reach an internal temperature of 145°F (63°C).

              Add Butter and Aromatics: Once the pork chops are nearly done, reduce the heat to medium-low and add the garlic rosemary butter to the skillet. Spoon the melted butter over the chops continuously for about 1-2 minutes.

                Rest the Chops: Remove the pork chops from the skillet and let them rest on a plate for 5 minutes. This allows the juices to redistribute throughout the meat.
