2 lbs pork loin

2 tablespoons fresh rosemary, chopped

4 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

4 medium apples, peeled, cored, and chopped (preferably Granny Smith and Honeycrisp)

1/2 cup maple syrup

1 tablespoon lemon juice

1 teaspoon cinnamon

Preheat your oven to 375°F (190°C).

    In a small bowl, mix the chopped rosemary, minced garlic, olive oil, salt, and pepper to form a paste.

      Rub the rosemary mixture all over the pork loin, ensuring to coat it evenly.

        Place the pork in a roasting pan and roast in the preheated oven for about 1 hour, or until a meat thermometer reads 145°F (63°C) in the center.

          While the pork is roasting, prepare the maple apple sauce. In a large saucepan over medium heat, add the chopped apples.

            Add the maple syrup, lemon juice, and cinnamon to the saucepan with the apples. Stir well and cook for 15-20 minutes, or until the apples are soft and the mixture has thickened slightly.

              Once the pork is cooked, remove it from the oven and let it rest for 10 minutes before slicing.

                Serve the sliced pork topped with the warm maple apple sauce.
