4 large russet potatoes, peeled and grated

1 teaspoon salt

1/2 teaspoon black pepper

1 cup mozzarella cheese, shredded

1/2 cup cherry tomatoes, halved

1/2 cup black olives, pitted and sliced

1/2 cup cooked and crumbled bacon (optional)

1/4 cup fresh basil leaves, chopped

1/4 cup sour cream (for drizzling)

Olive oil for sautéing

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the grated potatoes, salt, and black pepper. Mix well until the potatoes are evenly seasoned.

      Heat a large skillet over medium heat and add a drizzle of olive oil.

        Once the oil is hot, add the potato mixture to form a round pizza-like shape, about 1/2 inch thick. Cook for about 5-7 minutes until the bottom is crispy and golden brown.

          Carefully flip the rösti using a large plate or spatula. Cook the other side for another 5-7 minutes until it becomes crispy.

            Once both sides are golden brown, top the rösti with shredded mozzarella cheese, cherry tomatoes, black olives, and crumbled bacon (if using).

              Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is bubbling and slightly browned.

                Remove from the oven and sprinkle fresh basil on top. Drizzle sour cream over the pizza for extra creaminess.

                  Slice into wedges and serve warm.
