1 rotisserie chicken, shredded

2 cups mushrooms, sliced (any type, such as cremini or button)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

2 cups baby spinach

1 cup carrots, diced

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons olive oil

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Incorporate the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until they have released their moisture and are slightly browned.

        Add the diced carrots and celery, stirring to combine. Cook for another 3-5 minutes.

          Pour in the chicken broth and add the shredded rotisserie chicken, dried thyme, and dried rosemary. Stir well and bring to a gentle simmer.

            Once simmering, add the baby spinach and season with salt and pepper to taste. Allow the soup to simmer for another 10-15 minutes, so the flavors meld together.

              Taste and adjust seasoning if necessary, then turn off the heat.
