1 lb fresh salmon fillet, skin removed

1 cup breadcrumbs (preferably panko)

1/2 cup finely chopped green onions

1/4 cup fresh parsley, chopped

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 large egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for frying

Cook the Salmon: Preheat oven to 350°F (175°C). Place the salmon fillets on a baking sheet lined with parchment paper and season with salt and pepper. Bake for about 15-20 minutes or until cooked through. Let cool slightly, then flake into large pieces with a fork.

    Mix Ingredients: In a large mixing bowl, combine the flaked salmon, breadcrumbs, green onions, parsley, mayonnaise, Dijon mustard, beaten egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix gently until just combined—be careful not to overmix.

      Shape the Croquettes: Using your hands, shape the mixture into small patties, about 2-3 inches wide. You should get approximately 8-10 croquettes.

        Chill: Place the shaped croquettes on a plate or baking sheet and refrigerate for about 30 minutes. This will help them hold their shape when frying.

          Fry the Croquettes: Heat a generous amount of olive oil in a large skillet over medium heat. Once hot, carefully add the croquettes (do this in batches if necessary to avoid overcrowding the pan). Fry for about 4-5 minutes on each side or until golden brown and crispy.

            Drain and Serve: Remove the croquettes from the skillet and place them on paper towels to drain any excess oil. Serve hot with a squeeze of lemon and your favorite dipping sauce.
