Ingredients
  

2 cups mixed greens (arugula, spinach, and kale)

2 salmon fillets (6 oz each)

1 orange, segmented

1 grapefruit, segmented

1/2 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1 avocado, diced

1 tablespoon olive oil

Juice of 1 lemon

Salt and pepper, to taste

1/2 teaspoon smoked paprika

1 tablespoon fresh dill, chopped

Optional: Crushed walnuts for garnish

Instructions
 

Preheat your grill or stovetop grill pan over medium heat. Season the salmon fillets with olive oil, salt, pepper, and smoked paprika.

    Grill the salmon for about 4-5 minutes on each side, or until the internal temperature reaches 145°F and the fish flakes easily with a fork. Remove from the grill and let it rest for a few minutes.

      In a large bowl, combine the mixed greens, orange segments, grapefruit segments, cherry tomatoes, red onion, and diced avocado. Toss gently to combine.

        Squeeze lemon juice over the salad and drizzle with a little extra olive oil. Season with salt and pepper to taste.

          Once the salmon has cooled slightly, flake it into large pieces and gently mix it into the salad.

            Garnish with fresh dill and crushed walnuts if using, for added texture and flavor.
