500g boneless chicken thighs, cut into bite-sized pieces

1 tablespoon cornstarch

1 tablespoon all-purpose flour

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon sea salt

1 tablespoon soy sauce

2 eggs, beaten

Vegetable oil for frying

2 green onions, finely sliced (for garnish)

Fresh cilantro, for garnishing

Lime wedges, for serving

Instructions
 

In a large bowl, combine cornstarch, flour, baking powder, garlic powder, paprika, black pepper, and sea salt. Mix well.

    Add the chicken pieces to the bowl and toss to coat them evenly with the dry mixture. This will create a nice crispy texture once fried.

      Drizzle soy sauce over the coated chicken, and mix until all pieces are well coated. Let it marinate for about 15 minutes.

        In a separate bowl, beat the eggs until well blended. Dip each piece of marinated chicken into the beaten eggs, ensuring it's fully coated.

          Heat about ½ inch of vegetable oil in a deep skillet or wok over medium-high heat. Once hot, carefully place chicken into the oil in small batches, ensuring not to overcrowd the pan.

            Fry the chicken for about 4-5 minutes, or until golden brown and cooked through, turning occasionally for even cooking.

              Once cooked, remove the chicken pieces with a slotted spoon and place them on paper towels to absorb excess oil.

                Repeat the frying process for the remaining chicken pieces.

                  For an extra kick, sprinkle additional cracked black pepper and sea salt over the fried chicken just before serving.

                    Plate the chicken, garnish with finely sliced green onions and fresh cilantro, and serve with lime wedges on the side for squeezing over the top.
