1 pound large shrimp, peeled and deveined

1 tablespoon cornstarch

1 teaspoon black pepper

1 teaspoon sea salt

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch fresh ginger, grated

2 green onions, sliced (white and green parts separated)

1 fresh red chili, sliced (optional, for added heat)

Zest of 1 lime

1 tablespoon lime juice

Fresh cilantro leaves for garnish

Instructions
 

In a mixing bowl, combine the shrimp, cornstarch, black pepper, and sea salt. Toss well to coat the shrimp evenly.

    Heat vegetable oil in a large non-stick skillet or wok over medium-high heat until hot.

      Add the shrimp in a single layer (you may need to do this in batches) and cook for about 2-3 minutes on one side until they turn pink and slightly crisp.

        Flip the shrimp and add the minced garlic, grated ginger, sliced green onion whites, and sliced red chili (if using) to the skillet. Stir-fry for an additional 2 minutes until the garlic becomes fragrant and the shrimp is cooked through.

          Remove the shrimp from the skillet and transfer to a serving plate. Drizzle with lime juice and sprinkle with lime zest and the green parts of the sliced green onions.

            Garnish with fresh cilantro leaves before serving.
