For the crust:

1 ½ cups all-purpose flour

½ cup unsalted butter, softened

⅓ cup granulated sugar

¼ teaspoon salt

½ teaspoon vanilla extract

For the caramel layer:

1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

⅓ cup heavy cream

½ teaspoon sea salt

For the topping:

¼ cup all-purpose flour

¼ cup chopped pecans or walnuts (optional)

1 teaspoon sea salt for garnishing

Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the crust: In a medium bowl, cream together the softened butter and sugar until light and fluffy. Add in the vanilla extract and mix well. Gradually add the flour and salt, mixing until the dough is just combined.

      Press the crust into the pan: Spread the dough into the prepared baking pan, pressing it down evenly. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from oven and let cool slightly.

        Prepare the caramel: In a medium saucepan over medium heat, combine the sugar and butter. Stir continuously until the mixture is melted and turns a light golden color (about 5-7 minutes). Carefully whisk in the heavy cream until fully incorporated (the mixture will bubble). Remove from heat and stir in the sea salt.

          Add the caramel layer: Pour the warm caramel sauce over the cooled crust, spreading evenly with a spatula.

            Make the topping: In a small bowl, mix together the flour and chopped nuts (if using). Sprinkle this mixture evenly over the caramel layer, pressing lightly to adhere.

              Bake again: Return the pan to the oven and bake for an additional 15-20 minutes, until the topping is golden brown.

                Cool and slice: Remove from the oven and sprinkle the top with a bit more sea salt while it’s hot. Allow the bars to cool completely in the pan. For the best results, refrigerate for at least 1 hour. Once cooled, use the parchment paper to lift the bars out and slice them into squares.
