2 lbs red potatoes, diced

1 large onion, chopped

3 cloves garlic, minced

2 carrots, sliced

1 red bell pepper, chopped

1 tablespoon sweet paprika

1 teaspoon smoked paprika

1 teaspoon caraway seeds

1 teaspoon dried thyme

1 can (15 oz) diced tomatoes, undrained

4 cups vegetable broth

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until softened.

    Stir in the minced garlic and cook for another 1 minute until fragrant.

      Add the sliced carrots and chopped red bell pepper to the pot. Cook for 4-5 minutes until the vegetables begin to soften.

        Sprinkle in the sweet paprika, smoked paprika, caraway seeds, and dried thyme. Stir well to coat the vegetables with the spices, cooking for another 2 minutes.

          Add the diced potatoes to the pot, followed by the can of diced tomatoes and the vegetable broth. Stir to combine.

            Increase the heat to bring the mixture to a gentle boil, then reduce it to a simmer. Cover the pot and let it cook for about 25-30 minutes, or until the potatoes are fork-tender.

              Season the goulash with salt and pepper to taste. If you prefer a thicker sauce, let it simmer uncovered for an additional 10 minutes.

                Serve hot, garnished with fresh chopped parsley on top.
