Ingredients
  

1 pound ground sausage (your choice of spicy or mild)

2 cups shredded sharp cheddar cheese

1 cup almond flour (or regular flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (such as oregano and basil)

1/2 teaspoon black pepper

1/4 teaspoon salt

1/4 cup cream cheese, softened

1/4 cup chopped fresh chives (optional, for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground sausage, shredded cheddar cheese, and almond flour. Mix with your hands until well combined.

      Add the garlic powder, onion powder, Italian herbs, black pepper, and salt to the mixture, and continue to mix until fully incorporated.

        Next, fold in the softened cream cheese until evenly distributed throughout the mixture.

          Using your hands, form the mixture into bite-sized balls, about 1 inch in diameter, and place them on the prepared baking sheet. Make sure to leave some space between each ball for even cooking.

            Bake in the preheated oven for 20-25 minutes, or until the sausage balls are golden brown and cooked through. You can check doneness with a meat thermometer; it should read 160°F (71°C).

              Remove the baking sheet from the oven and let the sausage balls cool for a few minutes.

                If desired, garnish with chopped fresh chives before serving for an extra burst of flavor and color.
