Ingredients
  

1 lb Italian sausage (mild or spicy, based on preference)

2 tablespoons olive oil

1 medium onion, chopped

3 garlic cloves, minced

2 carrots, diced

2 ribs celery, diced

6 cups chicken broth

1 can (14 oz) diced tomatoes, with juices

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional for heat)

4 cups fresh spinach, roughly chopped

Salt and pepper to taste

1 cup small pasta (like ditalini or acini di pepe)

Grated Parmesan cheese for serving

Instructions
 

In a large pot over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes.

    Remove the sausage and set it aside, leaving the drippings in the pot. Add the chopped onion, carrots, and celery to the pot. Sauté for 5-6 minutes until the vegetables are softened.

      Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Return the browned sausage to the pot. Add the chicken broth, diced tomatoes (with their juices), oregano, basil, and red pepper flakes (if using). Bring to a boil, then reduce to a simmer and let it cook for 20 minutes.

          Add the pasta to the soup and cook for about 8-10 minutes until al dente.

            Stir in the fresh spinach and season with salt and pepper to taste. Cook for another minute until the spinach is wilted.

              Serve hot, topped with a sprinkle of freshly grated Parmesan cheese.
