Ingredients
  

1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

2 cloves garlic, minced

3 medium carrots, sliced

2 stalks celery, diced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

6 cups chicken broth

1 can (14.5 oz) diced tomatoes, with juices

1 package (9 oz) refrigerated tortellini (cheese or sausage-filled)

2 cups fresh spinach or kale, chopped

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large pot or Dutch oven, heat over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes. Remove excess fat if necessary.

    Add the Vegetables: To the pot with the sausage, add the diced onion, minced garlic, sliced carrots, and diced celery. Sauté until the vegetables are softened, about 5-7 minutes.

      Season the Soup: Stir in the dried oregano, basil, and red pepper flakes. Cook for an additional minute until fragrant.

        Pour in the Broth and Tomatoes: Add the chicken broth and diced tomatoes (with juices). Bring the mixture to a boil, then reduce heat to a simmer.

          Cook the Tortellini: Add the tortellini to the soup and cook according to package instructions, usually around 3-5 minutes, until they float to the top.

            Add Greens: Stir in the chopped spinach or kale and simmer for another 2-3 minutes until the greens are wilted.

              Season to Taste: Taste the soup and season with salt and pepper as desired.

                Serve: Ladle the soup into bowls, and sprinkle with grated Parmesan cheese and chopped parsley before serving.
