1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 can (14.5 oz) diced tomatoes, undrained

4 cups chicken or vegetable broth

1 package (9 oz) cheese tortellini (fresh or frozen)

2 cups baby spinach

Salt and pepper, to taste

1 tablespoon olive oil

Grated Parmesan cheese, for serving (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Brown the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon until browned and cooked through. Transfer the sausage to a plate and drain excess fat, leaving about a tablespoon in the pot.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are tender. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir in the Italian herbs, diced tomatoes (with juice), and broth. Bring the mixture to a boil, then reduce heat and let it simmer for about 10 minutes to meld flavors.

        Add Tortellini and Spinach: Increase heat to medium-high and add the tortellini to the pot. Cook according to package instructions (usually about 3-5 minutes for fresh tortellini or 7-10 for frozen). In the last minute of cooking, stir in the baby spinach to wilt.

          Season: Taste the soup and season with salt and pepper as desired. Add the browned sausage back to the pot and let it heat through.

            Serve: Ladle the soup into bowls, topping with grated Parmesan cheese and chopped parsley if desired. Enjoy this comforting bowl of deliciousness!
