Ingredients

3 large yellow onions, sliced into thin rings

1 cup of non-alcoholic beer (or beef broth for a non-beer option)

1 tablespoon olive oil

1 teaspoon brown sugar

1 teaspoon thyme, dried

Salt and pepper to taste

8 ounces pork belly, cut into small cubes

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Pork Belly: In a large skillet over medium heat, add the cubed pork belly. Cook until the fat begins to render and the pork is crispy, about 10-12 minutes. Use a slotted spoon to remove the pork from the pan and drain on paper towels.

Sauté the Onions: In the same skillet, remove excess grease, leaving about a tablespoon. Add the sliced onions and sauté until they begin to soften, approximately 5 minutes.

Add Flavor: Stir in the brown sugar, thyme, and a pinch of salt and pepper. Continue to cook for another 3-4 minutes until the onions are translucent and caramelized.

Infuse with Beer: Pour in the non-alcoholic beer (or beef broth) and apple cider vinegar. Bring to a simmer, reduce heat to low, and cook for about 15-20 minutes, stirring occasionally, until the liquid has reduced and thickened around the onions.

Combine and Cook: Add the crispy salted pork back into the skillet with the onions, mixing well to combine flavors. Heat everything through for another 5 minutes.

Serve: Adjust seasoning with additional salt and pepper if desired.
