8 oz fettuccine or spaghetti

2 cups fresh spinach, chopped

1 cup heavy cream

1 cup cream cheese, softened

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon nutmeg

Salt and pepper to taste

Optional: Crushed red pepper flakes for heat

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Spinach and Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the chopped spinach and cook until wilted, about 3-4 minutes.

      Make the Cream Sauce: Lower the heat and add the heavy cream and cream cheese to the skillet. Stir continuously until the cream cheese is completely melted and the mixture is smooth.

        Add Cheese and Seasonings: Gradually mix in the grated Parmesan cheese and nutmeg, stirring until combined. If the sauce is too thick, add some of the reserved pasta water until you reach your desired consistency. Season with salt, pepper, and red pepper flakes if using.

          Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss well to coat the pasta in the creamy spinach sauce. Heat everything together for another minute to ensure it's nicely mixed.

            Serve: Plate your savory creamed spinach pasta and garnish with additional Parmesan cheese and a sprinkle of black pepper.
