1 cup cannellini beans, soaked overnight and drained

1 cup chickpeas, soaked overnight and drained

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 red bell pepper, diced

1 zucchini, diced

1 can (14 oz) diced tomatoes, with juice

6 cups vegetable broth

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent (about 5 minutes).

    Add the diced carrots, celery, and red bell pepper to the pot, stirring occasionally until the vegetables begin to soften (about 5-7 minutes).

      Next, add the zucchini, soaked cannellini beans, and chickpeas to the pot. Stir to combine all the ingredients.

        Pour in the can of diced tomatoes (with juice) and vegetable broth. Stir in the smoked paprika, dried oregano, ground cumin, salt, and pepper.

          Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30-35 minutes, or until the beans and vegetables are tender.

            Taste and adjust seasoning if necessary, adding more salt and pepper as preferred.

              Once ready, remove from heat and let the flavors meld for a few minutes before serving.
