1 pound beef chuck roast

3 cups beef broth

1 packet ranch dressing mix

1 packet au jus gravy mix

1 cup pepperoncini (with some juice)

1 medium onion, sliced

3 cloves garlic, minced

12 ounces egg noodles

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side. Remove the beef from the pot and set aside.

    Sauté Aromatics: In the same pot, add the sliced onion and cook until translucent. Stir in the minced garlic and cook for another minute until fragrant.

      Add Flavorings: Return the seared beef to the pot. Sprinkle the ranch dressing mix and au jus gravy mix over the beef, then add the beef broth and the pepperoncini along with a few tablespoons of the juice.

        Cook the Beef: Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for about 2.5 to 3 hours, or until the beef is fork-tender.

          Cook the Noodles: In the last 15 minutes of cooking the beef, bring a separate pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

            Shred the Beef: Once the beef is tender, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir it into the sauce.

              Combine and Serve: Add the cooked egg noodles to the beef mixture, tossing everything together to coat the noodles with the savory sauce.
