1 lb (450g) breakfast sausage, crumbled

4 cups frozen hashbrowns, thawed

1 red bell pepper, diced

1 small onion, diced

1 cup shredded cheddar cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Preheat your oven to 375°F (190°C). Grease a 9x13 inch (3L) baking dish with olive oil to prevent sticking.

    In a large skillet over medium heat, add the crumbled breakfast sausage. Cook until browned and fully cooked, breaking it apart as it cooks (about 5-7 minutes). Once cooked, remove from heat and set aside.

      In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until soft. You can add a drizzle more of olive oil if needed.

        In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          To the greased baking dish, layer the thawed hashbrowns evenly across the bottom. Sprinkle the cooked sausage and sautéed vegetables on top of the hashbrowns.

            Pour the egg mixture over the sausage and veggies, ensuring it's evenly distributed. Top with shredded cheddar cheese.

              Bake in the preheated oven for 35-40 minutes, or until the eggs are set and the cheese is bubbly and slightly golden.

                Once baked, remove from the oven and let cool for about 10 minutes before slicing into squares.
