4 salmon fillets (6 oz each)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh basil leaves for garnish

Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning.

    Sear the Salmon: In a large skillet, heat olive oil over medium-high heat. Once hot, add the salmon fillets, skin-side down. Cook for about 4-5 minutes until the skin is crispy. Carefully flip them over and cook for another 3-4 minutes until the salmon is cooked through. Remove the salmon from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, add the cherry tomatoes. Sauté for about 2 minutes until they start to soften. Add the fresh spinach and cook until wilted.

        Creamy Delight: Reduce the heat to medium-low. Pour in the heavy cream and stir to combine. Allow it to simmer gently for 2-3 minutes. Add the grated Parmesan cheese and lemon juice, stirring until the cheese is melted and the sauce is creamy and smooth.

          Combine: Return the cooked salmon fillets back into the skillet, spooning some of the cream sauce over them. Allow them to simmer in the sauce for an additional minute to heat through.

            Serve: Plate the salmon with a generous amount of the creamy sauce and vegetables on top. Garnish with fresh basil leaves for an added touch of flavor and color.
