Ingredients
  

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 pound breakfast sausage

3 tablespoons flour (for sausage gravy)

2 cups milk

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

Fresh chopped parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt.

      Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

        Gradually add the buttermilk, mixing until a soft dough forms. Do not overmix.

          Turn the dough onto a floured surface and knead gently about 5 times. Pat into a rectangle about 1-inch thick.

            Use a biscuit cutter or a glass to cut out circular biscuits from the dough. You should get about 12 biscuits.

              In a skillet over medium heat, cook the breakfast sausage until browned and crumbled.

                Sprinkle the 3 tablespoons of flour over the sausage and cook for an additional minute, stirring constantly.

                  Slowly pour in the milk while stirring continuously until the gravy thickens. Season with black pepper and cayenne pepper (if using), then remove from heat.

                    To assemble, take a biscuit round and place a heaping tablespoon of sausage gravy in the center. Fold the edges over the filling and pinch to seal, forming a ball. Repeat with all biscuit rounds.

                      Place the biscuit bombs seam-side down on the prepared baking sheet. Bake for 15-18 minutes or until golden brown.

                        Once baked, remove from the oven and let cool for a few minutes.

                          Serve warm, garnished with chopped parsley.
