Ingredients

2 cups cooked chicken, shredded

1 cup black beans, drained and rinsed

1 cup corn, canned or frozen

1 cup cooked rice (white or brown)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup guacamole

1 cup sour cream

4 large flour tortillas

1 tablespoon taco seasoning (optional)

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions

Prepare the Chicken: In a mixing bowl, toss the shredded chicken with taco seasoning (if using), salt, and pepper until well combined.

Warm the Ingredients: If using canned corn and beans, heat them slightly in a saucepan over medium heat until warm. This makes assembly easier and tastier.

Set Up Your Assembly Station: Lay out all the ingredients in separate bowls—chicken, black beans, corn, rice, diced tomatoes, cheese, guacamole, and sour cream.

Assemble the Burritos: Place one large flour tortilla on a flat surface. Start layering:

          - First, spread a spoonful of guacamole in the center.

            - Add a layer of shredded chicken, followed by black beans, corn, rice, diced tomatoes, and a sprinkle of cheese.

              - Top with a dollop of sour cream.

Fold the Tortilla: Carefully fold in the sides of the tortilla, then roll it tightly from the bottom up to completely enclose the filling.

Grill (Optional): Preheat a skillet or griddle over medium-high heat. Place the burrito seam-side down and grill for about 2-3 minutes on each side until the tortilla is golden and crispy. This step adds extra flavor and texture.

Serve and Garnish: Slice the burrito in half diagonally for a beautiful presentation. Garnish with fresh cilantro if desired. Serve with additional sour cream or your favorite salsa on the side.
