4 large carrots, peeled

1 cup purple cabbage, finely shredded

1/2 cup fresh cilantro, chopped

1/4 cup sliced almonds, toasted

1/3 cup feta cheese, crumbled

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

Instructions
 

Using a vegetable peeler, shave the carrots into thin ribbons and place them in a large salad bowl.

    Add the finely shredded purple cabbage to the bowl with the carrots.

      Incorporate the chopped cilantro and toasted sliced almonds into the bowl, mixing among the vegetables.
