4 salmon fillets

1 bunch asparagus, trimmed

4 medium potatoes, diced

3 tablespoons olive oil

2 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, toss the diced potatoes with 2 tablespoons of olive oil, minced garlic, smoked paprika, salt, and pepper. Spread the potatoes in a single layer on a sheet pan.

      Roast the potatoes in the oven for 20 minutes until they start to become golden and tender.

        While the potatoes roast, prepare the salmon and asparagus. In another bowl, mix the remaining olive oil, lemon juice, lemon zest, dried thyme, salt, and pepper.

          After the potatoes have roasted for 20 minutes, remove the sheet pan from the oven. Push the potatoes to one side and add the asparagus to the other side. Lay the salmon fillets in the center of the pan.

            Brush the lemon mixture over the salmon and asparagus evenly, ensuring everything is well coated.

              Return the sheet pan to the oven and roast for an additional 15-20 minutes or until the salmon is cooked through (it should flake easily with a fork), the asparagus is tender, and the potatoes are crispy.

                Once done, remove from the oven and let it cool for a few minutes before serving.

                  Garnish with fresh chopped parsley for added color and flavor.
