4 large carrots, peeled and shredded

1 cup red cabbage, finely shredded

1/2 cup raisins

1/4 cup toasted sunflower seeds

1/4 cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

3 tablespoons extra virgin olive oil

Salt and pepper to taste

Juice of 1 lime

Instructions
 

In a large mixing bowl, combine the shredded carrots, red cabbage, raisins, and toasted sunflower seeds.

    In a separate small bowl, whisk together the apple cider vinegar, honey (or maple syrup), olive oil, lime juice, salt, and pepper until well emulsified.

      Pour the dressing over the salad mixture and gently toss everything together to ensure an even coat of dressing.
