1 lb shrimp, peeled and deveined

2 cups sushi rice

2 cups water

1 avocado, sliced

1 cup cucumber, diced

1/2 cup edamame, shelled

1/4 cup green onions, chopped

1 tablespoon sesame oil

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon honey

1 teaspoon sriracha (optional)

1 seaweed sheet (nori), cut into strips

Black sesame seeds for garnish

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rice and water, then bring to a boil. Once boiling, reduce heat to low and cover. Cook for about 15 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 10 minutes. Fluff with a fork and let cool slightly.

    Prepare the Shrimp: While the rice is cooling, heat a skillet over medium heat with sesame oil. Add the shrimp, cooking for about 2-3 minutes on each side, until they turn pink and opaque. Drizzle with soy sauce, rice vinegar, honey, and sriracha (if using) for extra flavor. Stir to combine and cook for another minute. Remove from heat.

      Assemble the Bowl: In each serving bowl, place a scoop of sushi rice as the base. Arrange the cooked shrimp on top, followed by sliced avocado, diced cucumber, shelled edamame, and chopped green onions.

        Garnish: Scatter nori strips and black sesame seeds over the bowls for added texture and flavor.
