Shrimp Stir Fry

1 pound large shrimp, peeled and deveined

2 tablespoons sesame oil

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 green onions, sliced (white and green parts separated)

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Sesame seeds for garnish

Salt and pepper to taste

Prep Shrimp: Rinse the shrimp under cool water and pat dry with a paper towel. Season with a pinch of salt and pepper.

    Heat Oil: In a large skillet or wok, heat the sesame oil over medium-high heat.

      Cook Shrimp: Add the shrimp to the skillet in a single layer, and cook for about 2-3 minutes until pink and opaque. Remove from the skillet and set aside.

        Sauté Veggies: In the same skillet, add the sliced bell pepper, broccoli, and julienned carrot. Stir-fry for 4-5 minutes until vegetables are crisp-tender.

          Flavors & Aromatics: Add minced garlic, ginger, and the white parts of the green onions to the pan. Stir continuously for about 1 minute until fragrant.

            Combine: Return the shrimp to the skillet and pour in the soy sauce and honey/maple syrup. Stir well to coat everything evenly.

              Thicken Sauce: Add the cornstarch slurry to the skillet while stirring. Cook for an additional minute until the sauce thickens and clings to the shrimp and vegetables.

                Final Touch: Adjust seasoning with salt and pepper if necessary. Stir in the green parts of the green onions.

                  Serve: Remove from heat and serve immediately.
