8 rice paper wrappers

12 oz cooked shrimp, peeled and deveined

1 cup vermicelli noodles, cooked and cooled

1 cup mixed greens (e.g., lettuce, spinach)

1 medium carrot, julienned

1 small cucumber, julienned

1/2 red bell pepper, thinly sliced

Fresh mint leaves

Fresh cilantro leaves

1 avocado, sliced

1/4 cup peanut butter

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon sesame oil

1 teaspoon lime juice

Instructions
 

Prepare your work station with a clean, flat surface for rolling the summer rolls.

    Fill a shallow bowl with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it softens but is not too limp.

      Carefully lay the softened wrapper on your work surface.

        In the center of the rice paper, layer a small amount of mixed greens, followed by a few shrimp, a small portion of vermicelli noodles, julienned carrot, cucumber, red bell pepper, a couple of mint leaves, cilantro leaves, and a few avocado slices. Don’t overfill!

          Fold the sides of the rice paper over the filling, then roll from the bottom up to form a tight roll. Repeat with the remaining wrappers and fillings.

            In a small bowl, whisk together the peanut butter, soy sauce, honey, sesame oil, and lime juice to create a dipping sauce. Add a little warm water if it’s too thick.

              Serve the summer rolls chilled or at room temperature with the dipping sauce on the side.
