4 pork sausages (your choice of spicy or mild)

1 lb (450g) Yukon Gold potatoes, peeled and diced

1/2 cup milk

4 tablespoons unsalted butter

1 medium onion, finely sliced

2 tablespoons olive oil

1 tablespoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through (about 15 minutes). Remove from the skillet and keep warm.

    Prepare the Mash: While the sausages are cooking, bring a large pot of salted water to a boil. Add the diced Yukon Gold potatoes and cook for about 15-20 minutes, until fork-tender.

      Sauté the Onions: In the same skillet used for the sausages, add the sliced onions and a pinch of salt. Sauté over medium heat for about 5-7 minutes until they are caramelized and soft. Add Worcestershire sauce to the onions and stir well to combine. Remove from heat and set aside.

        Mash the Potatoes: Once the potatoes are done cooking, drain them and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

          Plate the Dish: On a serving plate, spoon a generous mound of mash, creating a small well in the center. Lay the sausages on top of the mash and spoon the sautéed onions over the sausages.
