4 boneless, skinless chicken thighs

2 cups portabella mushrooms, sliced

2 tablespoons olive oil

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

4 cloves garlic, minced

1 cup chicken broth

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon lemon juice

1 tablespoon butter

Fresh rosemary sprigs, for garnish

Prepare the Chicken: Season the chicken thighs with salt, pepper, and half of the chopped rosemary. Let them sit for about 10 minutes to absorb the flavors.

    Heat the Skillet: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

      Brown the Chicken: Once the oil is hot, add the seasoned chicken thighs to the skillet. Cook for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Mushrooms: In the same skillet, add the sliced portabella mushrooms. Sauté for about 5 minutes until they are softened and slightly browned.

          Add Garlic and Broth: Stir in the minced garlic and the remaining rosemary. Cook for an additional 1-2 minutes until fragrant. Then, pour in the chicken broth and lemon juice, scraping the bottom of the skillet to release flavor bits.

            Combine and Simmer: Return the chicken to the skillet, nestling it into the sauce. Reduce the heat to low and let it simmer for 10-15 minutes, allowing the flavors to meld and the sauce to reduce slightly.

              Finish with Butter: Just before serving, stir in the tablespoon of butter for added richness. Make sure everything is well-coated in the sauce.

                Garnish and Serve: Serve the chicken hot, garnished with fresh rosemary sprigs, alongside your choice of sides such as mashed potatoes or steamed vegetables.
