2 pounds beef stew meat, cut into bite-sized pieces

1 pound baby potatoes, halved

1 tablespoon olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

1 medium onion, chopped

1 teaspoon smoked paprika

1 teaspoon dried thyme

2 cups beef broth

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the olive oil in a skillet over medium-high heat. Add the beef stew meat, season with salt and pepper, and brown on all sides (about 5-7 minutes). Transfer the meat to the slow cooker.

    In the same skillet, melt 2 tablespoons of the butter. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add the sautéed onion and garlic mixture to the slow cooker with the beef.

        Sprinkle the smoked paprika, dried thyme, and add the halved baby potatoes to the slow cooker. Pour in the beef broth, ensuring the potatoes and meat are covered.

          Cover and cook on low for 6-7 hours or high for 3-4 hours, until the beef is tender.

            About 15 minutes before serving, melt the remaining 2 tablespoons of butter and drizzle over the beef and potatoes, stirring gently to combine.

              Taste and adjust seasoning with additional salt and pepper if necessary.

                Garnish with fresh parsley before serving. Enjoy!
