4 large russet potatoes, peeled and diced

1 large onion, finely chopped

3 cloves garlic, minced

4 cups low-sodium chicken broth

2 cups smoked sausage (such as kielbasa), sliced

1 cup carrots, diced

1 cup celery, diced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a lighter option)

Fresh chives, chopped (for garnishing)

Instructions
 

In the slow cooker, combine the diced potatoes, onion, garlic, smoked sausage, carrots, and celery.

    Pour the chicken broth over the ingredients, making sure everything is submerged.

      Add the dried thyme, smoked paprika, and season with salt and pepper to taste. Stir to combine.

        Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, until the potatoes and vegetables are tender.
