Ingredients
  

1 lb (16 oz) Velveeta cheese, cubed

1 can (10 oz) Rotel tomatoes with green chilies, undrained

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup diced onion

1/2 cup diced bell pepper (any color)

1 packet (1 oz) taco seasoning

1/2 lb ground beef or sausage (optional)

Fresh cilantro for garnish (optional)

Tortilla chips for serving

Instructions
 

Optional Meat Prep: If using the ground beef or sausage, cook it in a skillet over medium heat until browned. Drain excess fat and set aside.

    Slow Cooker Setup: In a slow cooker, add the cubed Velveeta cheese, Rotel tomatoes (with juices), black beans, corn, diced onion, diced bell pepper, and taco seasoning. If you cooked meat, add it to the mixture as well.

      Mix Thoroughly: Stir all the ingredients together until the cheese is distributed evenly.

        Cook: Cover the slow cooker and set it on low heat. Cook for about 2-3 hours, stirring occasionally, until the cheese is melted and the dip is warm.

          Serve: Once melted and creamy, give it a final stir. Serve the dip hot, garnished with fresh cilantro if desired, alongside tortilla chips for dipping.
