2 lbs beef chuck roast

1 onion, sliced

4 cloves garlic, minced

1 cup beef broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

1/2 teaspoon cayenne pepper (optional for heat)

1 tablespoon olive oil

Salt and pepper to taste

12 small corn or flour tortillas

Toppings: diced tomatoes, shredded lettuce, avocado slices, fresh cilantro, lime wedges

Instructions
 

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef chuck roast generously with salt and pepper, then sear it on all sides until browned, about 3-4 minutes per side. This step enhances the flavor.

    Prepare the Slow Cooker: Slice the onion and sprinkle it evenly at the bottom of the slow cooker. Place the seared beef on top of the onions.
