200g smoked salmon, thinly sliced

3 tablespoons capers, drained

2 tablespoons olive oil (for frying)

1 tablespoon olive oil (for drizzling)

1 teaspoon caper brine

1 tablespoon lemon juice

1 small handful fresh dill, finely chopped

1 small handful fresh parsley, finely chopped

Salt and freshly cracked black pepper to taste

Lemon wedges, for serving

Prepare the Capers: Heat 2 tablespoons of olive oil in a small frying pan over medium heat. Add the drained capers once the oil is hot. Fry for about 2-3 minutes until the capers are crispy and start to pop. Use a slotted spoon to transfer to paper towels to drain excess oil. Set aside.

    Arrange the Salmon: On a large serving plate, lay out the thinly sliced smoked salmon in an overlapping pattern to cover the plate completely.

      Create the Dressing: In a small bowl, mix together 1 tablespoon of olive oil, caper brine, lemon juice, and half of the chopped dill and parsley. Season with salt and freshly cracked black pepper.

        Dress the Carpaccio: Drizzle the dressing evenly over the smoked salmon, ensuring it gets into the layers.
