Ingredients

8 oz fusilli or rotini pasta

6 oz smoked salmon, torn into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1/4 cup capers, drained

1/4 cup fresh dill, chopped

1/4 cup olive oil

2 tbsp lemon juice

Salt and black pepper to taste

Instructions

Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until emulsified.

Combine the salad: In a large mixing bowl, combine the cooled pasta, smoked salmon, cherry tomatoes, cucumber, red onion, capers, and fresh dill.

Dress the salad: Drizzle the dressing over the salad mixture and gently toss to combine all the ingredients evenly.

Chill and serve: Cover the bowl and let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld. Serve cold or at room temperature.
